Catching Some Oxtail

Oxtails are a delightful food, especially if you like gnawing the meat off of bones.  The down side is that they are a really tough cut of the cow, often requiring the use of a pressure cooker or a crockpot to make flavorful and tender.  Well, since most of us do not have a pressure cooker or a crockpot at home, I’ve developed a really simple recipe to prepare oxtails, patience is required.  Don’t worry, your patience shall be rewarded!

Ingredients
1 stalk of lemongrass
2 stalks of scallions
2-3 cloves of garlic
quarter of a medium sized red onion
half of a shallot
1 inch knob of ginger
3/4 cup of water
1/2 cup of light brown sugar
1/2 cup of tamari soy sauce
About 2.5lbs of oxtails

Marination
Cut the ends of the lemongrass, and remove the first layer.  Give the lemongrass a good good pounding with a heavy object such as a mallet or in my case, the back of a heavy meat cleaver.  Finely chop up the lemon grass. oxtails002oxtails003 oxtails004 oxtails005 oxtails006

Roughly chop up the scallions, garlic, red onion, shallot, and ginger. oxtails007

In a small pot, add the water, soy sauce, and brown sugar.  Cover and bring to a boil.  Once at a boil, turn off the heat, remove the cover, and add the chopped ingredients.  Cover once again and let the marinade cool down to room temperature. oxtails009oxtails010 oxtails011

Place the oxtails in a large zip-loc bag or two medium ones and pour in the cooled down marinade.  Whatever you do, do not trim the fat off the oxtails, it helps with the flavor and will keep the meat moist.  Seal up the bag, give it a good shake, and place in the refrigerator on it’s side and marinate for 48 to 72 hours, flipping once every morning and night.  I recommend marinating for about 72 hours. oxtails012

Cooking
Finally! The marinating period has ended! Pre-heat the oven to 265 degrees.

Remove the oxtails from the refrigerator and let it come to room temperature.  Heat up an oven safe pan on medium high heat.  Sear the oxtails on the top and bottom until a brown crust envelopes.  Whatever you do, do not throw out the marinade! oxtails013

Once seared, remove from heat, pour the marinade onto the oxtails and into the pot, add water until it reaches the bottom half of the oxtails, cover with foil and transfer to the oven.  Bake it for 3.5 hours. oxtails014
